Combine Greek yogurt, wing sauce, and dray ranch salad dressing mix in a small bowl. In a medium bowl, combine chicken, celery, and blue cheese (if using). Pour in buffalo sauce and stir to combine. Top each lettuce leaf with chicken salad and devour.

Combine all ingredients in a medium mixing bowl. Top each lettuce leaf with chicken salad and devour.
for the Apple Cranberry Chicken Salad
Combine chicken, apple, cranberries, and almond in a medium mixing bowl. In a small bowl, combine yogurt, vinegar, and season with Kosher salt. Pour sauce over chicken mixture and stir to combine. Top each lettuce leaf with chicken salad and devour.
In order to make all four recipes, you’ll need 4 cups of roasted chicken. This is equivalent to approximately two store bought rotisserie chickens (which is also a HUGE timesaver!)
