{Slow Cooker} Coconut Curry Chicken Thighs

A warming, comforting recipe for your slow cooker!  This Coconut Curry Chicken is full of flavor (hello curry, garam masala, and turmeric) and is super easy to prepare for those busy weeknight dinners.

It’s cold.  Like, stupid cold.

But that hasn’t stopped Steve and I from keeping our commitment to hit the gym. We’re determined.  It feels great to be back, although our muscles are revolting from months (okay, years) of inactivity.  My chest hurts.  My arms really hurt.  I’m so sore that I literally needed Asheley’s help taking off my sweatshirt yesterday.  Stop making fun of me.

And I wish I could tell you that this warming, comforting bowl of slow cooker coconut curry chicken is waiting for me tonight as I walk through the door after work.  I wish I could tell you that.  But it was actually made and consumed many weeks ago.

I may or may not have totally forgotten all about it until I was looking through some photos the other day and whoops.  It was honestly like putting on a jacket you haven’t worn in a while and finding some money in the pocket.  Whoa, hey, look at that!  It was an unexpected surprise.  And now I’m passing that surprise on to you.  You’re welcome.

Something else I totally forgot about?  Naan.  I can remember sitting down with Asheley about to eat this and doh, no naan.  That would have been so delicious.  So do yourself a favor and make sure to grab yourself some naan before making this slow cooker coconut curry chicken.

{Slow Cooker} Coconut Curry Chicken Thighs

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs
  • 4 carrots, peeled and diced
  • 2 bell peppers, diced
  • 1 medium onion, peeled and quartered
  • 2 large cloves garlic, peeled
  • 1 tablespoon fresh ginger (about the same size as 2 cloves of garlic)
  • 1 jalapeno, seeded and halved
  • 1 (6 ounce) can tomato paste
  • 2 cups canned unsweetened coconut milk
  • 2 teaspoons salt
  • 3/4 tablespoon curry powder
  • 3/4 tablespoon garam masala
  • 1/2 teaspoon turmeric
  • 1 1/2 tablespoons cornstarch
  • 2 tablespoons water
  • Cooked white or brown rice
  • Naan, for garnish
  • Plain Greek Yogurt, for garnish
  • Cilantro, for garnish

Instructions

  1. Spray the inside of your slow cooker with nonstick cooking spray. Add chicken, carrots, and bell peppers.
  2. Combine onion, garlic, ginger, jalapeno, tomato paste, coconut milk, salt, curry powder, garam masala, and turmeric in a food processor until mostly smooth. Pour sauce mixture over chicken. Cook on low for about 6 hours.
  3. Combine cornstarch and water in a small bowl until dissolved. Pour mixture into the slow cooker, stir to combine, and cook for one more hour, or until sauce thickens to desired consistency.
  4. Serve coconut curry chicken over rice, garnished with plain greek yogurt, naan, and cilantro.
  • Prep Time: 15 minutes
  • Cook Time: 7 hours

    I applaud you for going to the gym in cold weather. I can’t even get myself out of the house when it’s 50 degrees out.       Haha thanks Anne. It sure is tough getting out of bed, but having that accountability of knowing someone else is waiting for me at the gym is a big motivator. If I didn’t show up and my friend did, I would never hear the end of it!

    Man, I do this all the time! I totally forget about pictures and recipes and then find them 4 years later (a slight exaggeration) and remember how delish they were! I am totally in love with 1) slow cooker meals 2) curry and 3) naan bread. Basically, this dish!

    I can’t help but laugh that you couldn’t get your sweatshirt off. Don’t worry–you’ll laugh with us one day too. ๐Ÿ˜‰ This looks delicious! Slow cookers are a total win and coconut curry is suuuuuch a tantalizing flavor combination. Although Seattle is a lucky city in the frozen USA right now, this still looks perfect for a nice, hot meal after a “cold” day. Gorgeous photos, too! Pinning!

    I’m always looking for new crockpot recipes! This sounds awesome – anything with coconut milk and I am sooo there. It’s super cold here too – I constantly walk around the house with a giant blanket haha

      Honestly, I really don’t even taste the coconut in this. I’m totally not a fan of coconut either, but it’s super faint in this dish… maybe it’ll be a good introduction into the land of coconut for him ๐Ÿ™‚

    This looks so good! I’ve just recently started eating Indian food, and I absolutely love it! Especially when there is coconut in the sauce. I really need to buy a slow cooker – I have been saying that for months now, but I really do! This recipe looks so good! Lift some weights for me ๐Ÿ™‚

      Cate, you totally need a slow cooker! It’s so easy for “set it and forget it” type meals. You can do soups, pulled chicken/pork, and so much more! Haha, I’ll definitely lift some weights for you. I just can’t guarantee that I’ll be able to move much after the fact. So sore…

    Love surprises like that…lol, I’m the same way with some of my posts. My hubby and I are HUGE fans of Indian food so this looks amazing. I don’t use my slow cooker often but I better dust it off because I’d love to make this! And naan is certainly a must here. ๐Ÿ™‚

    Stupid cold indeed. I Love slow cooker recipe so bring em’ on! It is so easy to get stuck making the same old boring meals sometimes so I’m excited about the promise of new ideas ๐Ÿ™‚ This dish does sound wonderful, I’m still not sure how you were able to consume it without Naan but I’m not judging here ๐Ÿ˜‰ Keep up the work at the gym!

    We’re living with my mother-in-law for a few months (long story!) so I don’t have my slow cooker (crockpot!) with me – lovely recipes like this one really make me miss it! I can’t wait until I can put food in it again in the morning and come home to a delicious hot meal. Will give this one a go once I’m home … thank you for the nice idea!

      You can probably use skinless chicken breasts, but there is no need to cut into small chunks. I think that the chicken breasts would probably cook a bit quicker… the only reason why I usually use chicken thighs is because the dark meat stays a bit moister throughout the process.

    I absolutely love this dish & have made it twice & am at the moment enjoying it leftover for lunch. I just wanted let you all know if you don’t already, Trader Joe’s has excellent frozen nan & it goes great with thjis awesome meal. It heats up in 2 minutes and really is very good.
