There's a new player in the candy aisle, and it's about to be introduced in a big way. Butterfinger Cups Brownie Sundae with fudgy, skinny {Gluten-Free} Chocolate Peanut Butter Avocado Brownies.
Remember those {Gluten-Free} Fudgy Avocado Brownies from yesterday?
It's about to get a little bit crazy up in here. In the most responsible, respectful way possible, of course. Let's show some decorum, people.
I know it's hard to remain calm when there's brownie sundaes on the line. I, for one, am known to get overly-excited about dessert.
We're taking those brownies. Adding in a gorgeous peanut butter swirl. Topping it with your favorite ice cream. A generous drizzle of homemade magic shell. And then, of course, our new friend, the Butterfinger Cups.
Anyone else love candy as much as I do? And of course they are always waiting for you right at the check-out line, just staring at you. Asking for a home.
With my operation stop being a fatty still going strong (although I must admit I cheated a wee bit too much this past week with being off from work and all), I have tried to muster every ounce of self-will and determination to take a hiatus from those glorious checkout candy displays.
But hey, when #CollectiveBias asks you to try out this super cool new candy and to give it a recipe test run, how could I say no?
You already know that these gluten-free brownies are pretty killer. Moist, fudgy, and chocolately. Add in that peanut butter swirl and some Butterfinger Cups pieces baked into the batter... now it's a party.
And sure you could go ahead and just serve the brownies at parties. But we can do better. And now that football is done, let's focus on some good eats during all that basketball watching. Although Asheley and I really don't watch all that much pro-basketball (okay, none), we do like to turn on a college game now and then throughout March.
And do you know what makes watching basketball even better? Brownie sundaes. In fact, I'm pretty sure brownie sundaes makes everything better.
PrintButterfinger Cups Brownie Sundae with Chocolate Peanut Butter Avocado Brownies
- Total Time: 45 minutes
- Yield: 8-10 Brownie Sundaes 1x
Ingredients
- 1 batch Chocolate Peanut Butter Avocado Brownies (see below)
- 1.5 quart carton of your favorite ice cream
- Magic Shell (see below)
- 4 Butterfinger Cups (1 king size package), roughly chopped
for the Brownies
- 1 ripe Haas avocado
- ΒΌ cup (half of one stick) unsalted butter, melted
- 1 egg
- 1 Β½ cups coconut sugar
- 2 tablespoons water
- 2 teaspoons vanilla extract
- ΒΎ cup unsweetened cocoa powder
- Β½ teaspoon Kosher salt
- ΒΌ cup gluten-free flour (I used Trader Joe's)
- ΒΌ cup Butterfinger Cups, roughly chopped
- ΒΌ cup smooth creamy peanut butter
for the Magic Shell
- 8 ounces dark chocolate, chopped
- 2 tablespoons liquid coconut oil
Instructions
- Divide brownies among bowls. Top with ice cream, drizzle with magic shell, and sprinkle chopped Butterfinger Cups on top. Devour immediately.
for the Brownies
- Preheat oven to 350Β°F. Line a 8x8" baking pan with aluminum foil, leaving an overhang over the sides of the pan, and spray foil lightly with nonstick cooking spray.
- In a large bowl, mash avocado very well with a fork. You want it to be as smooth as possible. Add the melted butter, egg, coconut sugar, water, and vanilla, and stir well to combine. Add cocoa powder and stir until fully incorporated and free of any large lumps. Stir in flour and salt until just combined, and then briefly incorporate chopped Butterfinger Cups.
- Spread batter evenly in the aluminum foil lined pan. Drop spoonfuls of peanut butter randomly on top of batter. Take a butter knife and drag peanut butter through batter, creating a swirl effect, taking care not to cut through the aluminum foil. Bake for about 35 minutes, until the top has just set. Allow brownies to cool completely (about 1 hour) in the pan on a cooling rack. Once completley cool, lift entire brownie out of pan using the foil overhangs. Remove foil from brownies and slice into 9 to 12 squares.
for the Magic Shell
- Combine chocolate with coconut oil in microwave safe dish. On half power, microwave chocolate and coconut oil in 30 second intervals, stirring between each, just until chocolate is melted and coconut oil is fully incorporated. Let cool to room temperature.
- Prep Time: 10 minutes
- Cook Time: 35 minutes

Technically I'm on a diet also Christine... so unfortunately I had to watch that ice cream sundae be eaten by Asheley, while I sat and cried in the corner (while editing the photos of said sundae). Darn these stupid diets... taking away all our fun!

I think as I'm getting older my sweet tooth is getting increasingly annoying! Anywho, I have never tried avocado and chocolate...however I have seen it everywhere. Omg!! This looks amazing! I've seen the commercials for this butterfingers peanut butter cup, but haven't seen them in the store. Or maybe I just haven't really looked :D. I had to really look a ton to find them since they literally just came out. Check at the candy display at the checkout line... that's where I found it... and there were only 3 left (and yes, I bought all 3 haha).
