They help spice things up in the lunch department. I'm known to be a loyal consumer of rice cakes with peanut butter + jelly for lunch throughout the work week. Healthy Apple Cranberry Chicken Salad - the Greek yogurt gets pumped up with some apple cider vinegar, and then mixed up with chicken, Granny Smith apples (very important to use Granny Smith's in my book... they are perfectly tart for this salad), dried cranberries, and sliced almonds.
Healthy Buffalo Chicken Salad - mix up some wing sauce and dry ranch mix with some Greek yogurt and combine it with chicken and celery. A little sprinkle of blue cheese and you have your favorite buffalo wings in chicken salad form.
Healthy Greek Chicken Salad - the secret to success in this chicken salad is the tzatziki, which is combined with chicken, cucumber, tomatoes, and kalamata olives. Sprinkle on some feta for bonus points.
Healthy Pesto Chicken Salad - okay you got me, there's no Greek yogurt in this one. Just good 'ole healthy pesto, combined with chicken, tomatoes, and a little shredded mozzarella cheese.

They can ALL be made ahead of time, each only take MINUTES to prepare, and you can make the process even simpler by grabbing a couple rotisserie chickens at the grocery store. That's what I do every time. Who's got time to roast chickens all day? Just give me some rotisserie and chop it up. Easy and done.

Ingredients
for the Pesto Chicken Salad
- 1 cup chopped roasted chicken
- ¾ cup quartered cherry tomatoes
- ¼ cup shredded mozzarella cheese
- ¼ cup pesto
- 8 leaves Bibb or Boston lettuce, for serving
for the Buffalo Chicken Salad
- ¼ cup Greek yogurt
- ½ tablespoon wing sauce
- ¾ teaspoon dry ranch salad dressing mix
- 1 cup chopped roasted chicken
- ¾ cup chopped celery
- ¼ cup crumbled blue cheese, if desired
- 8 leaves Bibb or Boston lettuce, for serving
for the Greek Chicken Salad
- 1 cup chopped roasted chicken
- ½ cup quartered cherry tomatoes
- ½ cup chopped cucumber
- ¼ cup sliced kalamata olives
- ¼ cup tzatziki sauce
- ¼ cup crumbled feta, if desired
- 8 leaves Bibb or Boston lettuce, for serving
for the Apple Cranberry Chicken Salad
- 1 cup chopped roasted chicken
- 1 granny smith apple, peeled and finely chopped
- ⅓ cup dried cranberries
- ¼ cup sliced almonds
- ⅓ cup Greek yogurt
- 1 teaspoon apple cider vinegar
- Kosher salt
- 8 leaves Bibb or Boston lettuce, for serving
Instructions
for the Pesto Chicken Salad
- Combine all ingredients in a small mixing bowl. Top each lettuce leaf with chicken salad and devour.
for the Buffalo Chicken Salad
- Combine Greek yogurt, wing sauce, and dray ranch salad dressing mix in a small bowl. In a medium bowl, combine chicken, celery, and blue cheese (if using). Pour in buffalo sauce and stir to combine. Top each lettuce leaf with chicken salad and devour.
for the Greek Chicken Salad
- Combine all ingredients in a medium mixing bowl. Top each lettuce leaf with chicken salad and devour.
for the Apple Cranberry Chicken Salad
- Combine chicken, apple, cranberries, and almond in a medium mixing bowl. In a small bowl, combine yogurt, vinegar, and season with Kosher salt. Pour sauce over chicken mixture and stir to combine. Top each lettuce leaf with chicken salad and devour.
Notes
In order to make all four recipes, you'll need 4 cups of roasted chicken. This is equivalent to approximately two store bought rotisserie chickens (which is also a HUGE timesaver!)
