Well that was fun. This past week I enjoyed a glorious week off. It's one of those awesome perks of teaching. Winter vacation... you rock.
I got to spend some much needed quality time with my two favorite girls (that would be my wife and daughter, in case you didn't already know). We also caught up on some of those annoying lingering house projects that we've put off way too long. And as always my goal during vacations from work, I ate so much ridiculously awesome food, including the omakase at Sushi Nakazawa in NYC (documentary fans: Chef Nakazawa was a protege of legendary sushi chef Jiro Ono from Jiro Dreams of Sushi. He was the one training to make the egg sushi in the film).
Now winter vacation is over. Meh.
I have to get back on track with making better food choices. Being in my normal work routine always helps with that. Flatout Bread helps too. All of their wraps are right around the 100 calorie mark, and are the perfect blank canvas for all sorts of flavors. This Hawaiian BBQ Chicken Wrap is going to be a staple in my lunch and dinner rotation. Not only does it pack a major flavor punch, but it also comes together in under 10 minutes! Boom.
This wrap came about kinda by accident. I bought a pineapple at the store because Olivia has been stuck in a berry rut lately. She eats them like it is her job and maintaining her organic berry habit throughout the winter would require me to get a fourth job. Thus, it was time to start supplementing her fruit intake with something different. She downed almost the entire pineapple (along with half an avocado), leaving me with just enough to make myself a wrap for lunch.
Considering Asheley is obsessed with BBQ sauce, it shouldn't come as a surprise that my mind jumped from pineapple to BBQ sauce to ohhhhh I can make a Hawaiian BBQ Chicken Wrap! And what a delicious lunch it was.
The crunch of the lettuce. The sweet and sticky bbq chicken. Juicy fresh pineapple. Creamy avocado. The bite of raw red onion. All wrapped up in one glorious Hawaiian BBQ Chicken Wrap. Uh huh.

Ingredients
- 4 Flatout Flatbreads
- 2 cups chopped grilled chicken
- ¼ cup BBQ sauce
- 1 cup fresh pineapple, finely chopped
- 2 avocados, finely chopped
- 1 small red onion, thinly sliced
- 1 head romaine lettuce
Instructions
- Combine chicken and BBQ sauce in a medium bowl. Top each wrap with BBQ chicken, pineapple, avocado, red onion, and lettuce. Roll up flatbreads into wraps and cut in half. Devour.
